If the vaad is authorized by everyone to determine the amount of “dmei nihul” the only way to change it is to replace the vaad-bayit by a new one. I can not say if logical grounds can play a role here, unless I read exactly what the written documents say. You are trying to apply logical thinking where only legal matter counts. Therefore only a lawyer can give you a definite answer after investigating the agreements you signed
